Sweet dhokla

Ingredients
Red Rice Poha | ¼ cup
Rava Medium | ¼ cup
Sathumaavu/ Homemade health mix | ¼ cup
Grated carrots | ¼ cup
Dates | 10 numbers roughly chopped
Cashews | 10 numbers roughly chopped
Walnuts | 10 numbers roughly chopped
Raisins | 10 numbers
Groundnuts | 1 Tbsp roasted and deskinned
Milk | ¼ cup
Brown sugar | ¾ cup
Ghee | 1 tsp
Cardamom powder | ¼ tsp
Cinnamon powder | pinch
Nutmeg powder | pinch
Eno fruit salt | ¾ tsp ( or ¼ tsp baking soda)

Directions
1. Roast the rava until pleasant smell.
2. Wash and soak the Poha for 10 min.
3. Once the poha is soaked, squeeze excess water out of the poha and
mash it well.
4. Mix together the poha, rava, sathumaavu and grated carrots.
5. Add the milk to this mix and stir to get even consistency. Leave it aside for
10 min.
6. After 10 min the rava would have soaked in the milk. Add the walnuts,
dates, raisins and cashews along with the mix. Also add the cinnamon
powder, cardamom powder and nutmeg powder and ghee. Mix all the
ingredients well.
7. The consistency of the batter should be little thicker than idli batter. If it is
too thick add in a little water to adjust the consistency.
8. Grease a vessel with little ghee and pour the mix into it. Steam the mix for
20 min, till a toothpick inserted in the centre comes out clean.
9. Take the dhokla off the steam and let it sit for a min or two. Serve hot
garnishing with roasted cashews.
